Method
Preheat oven to 180 degrees and line an oven tray with baking paper
Place your cubed pumpkin into the tray, quartered onions and whole garlic cloves. Spray with olive oil and season with salt and pepper. Mix well to coat seasoning evenly.
Roast in the oven for 20-30 minutes or until the pumpkin is golden brown and soft.
Heat Stock in a pot on the stove. Add the contents of the roasting pan into the boiling stock. Simmer for 10 Minutes.
Remove from heat, wait for it to cool slightly before blending with a stick mixer until smooth.
Serve with a drizzle of cream and a spoonful of crunchy bacon pieces on top and some warm crusty bread!
