Lemon & Herb Chicken with Creamy Mushroom Sauce

Ingredients

  • 4 chicken breasts or thigh fillets
  • 1-2 Cups button mushrooms cut into quarters 
  • 1 Red onion sliced
  • 1 cup Chicken Stock
  • 1 sachet Gourmet Granny’s Mushroom Sauce
  • 1 cup thickened cream 
  • Juice & zest of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp olive oil
  • Salt & pepper
  • Steamed green beans or asparagus, to serve

Method:

  1. Heat oil in fry pan, brown the Mushrooms and Onions, then set aside. 
  2. Season chicken with salt, pepper, and lemon zest. Pan fry until golden and cooked through, then set aside.
  3. Deglaze the pan with 1 cup Chicken Stock, then add 1 sachet of Gourmet Granny's Mushroom Sauce and whisk until combined. Simmer for 1-2 minutes then add 1 cup of Cream and stir. 
  4. Stir through the juice of 1/2 lemon and then add back the Mushroom, Onion and Chicken to the pan and simmer together for 2-3 minutes. Top with Fresh Parsley or Thyme. 
  5. Serve with steamed spring vegetables.

    Granny’s Tip:
    Serve with mash, greens, and add a sprinkle of parmesan for an extra flavour kick!
